Waffles

2 eggs
2 C. milk
2 C. Flour
1 Tbsp. baking powder
3/4 tsp. salt
1 Tbsp. sugar
4 Tbsp. oil

beat 2 egg whites until stiff set aside. Whisk 2 egg yolks and milk together. Beat in flour, baking powder, salt, sugar, and oil. Fold in egg white and cook in waffle iron. Serve with strawberries and cool whip.

Pumpkin Rolls

3 large eggs 1 tsp. ginger
1 cup sugar ½ tsp. nutmeg
¾ cup cooked pumpkin ½ salt
1 tsp. lemon juice 6 oz package of cream cheese
¾ cup flour 1 cup of powdered sugar
1 tsp baking powder 4 Tbsp. unsalted butter
2 tsp. cinnamon ½ tsp. vanilla

Grease and flour jelly roll pan. Beat eggs 4-5 minutes. Gradually add sugar. Mix in pumpkin and lemon juice. Combine flour, baking powder and spices. Fold dry ingredients into pumkin mixture. Pour into greased pan; smooth top evenly. Bake at 375 degrees for 12-15minutes. Turn out on a towel sprinkled with powdered sugar. Beginning at the narrow end of cake, roll the cake and towel together. When the cake is completely cool, unroll the cake and spread on the filling.
Filling:
Combine: cream cheese, powdered sugar, butter and vanilla. Sprinkle 1 cup of chopped nuts on top of filling. Reroll cake and chill for 30 minutes.

Yummy bean's and rice

4 cans of black beans
1 canned of corn
2 uncooked chicken breasts
1 cup of salsa
Salt and pepper to the taste
3 cloves garlic


Dump all ingredients in a crock pot and let cook on high for 8 hours. After 6 hours take chicken out of the pot and shred it with a fork, place back in the pot and add salt and pepper to the taste. Serve over rice and any other topping that you would like we use cheese, tomatoes, sour cream, and guacamole. Depending on the size of your family this recipe leaves lots of yummy leftovers! Freeze leftovers and heat up in a sauce pan when your want to eat it again.


Easy chicken enchiladas

2 cups of shredded chicken
1 cup of green pepers
8oz package of cream cheese
8oz jar of salsa divied
8(6") flour tortillas
cheddar cheese
1/4 cup of milk

In a sauce pan stir in bell peppers, cream cheese, and 1/2 cup of salsa untill cream cheese is melted. spoon 1/3 cup of chicken mixure down the center of tortilla, sprinkle with cheddar cheese, and roll up. Place on a lightly greased dish and top with cheddar cheese. Bake at 350 degrees for 20-30 minutes or untill fully cooked.

Big and Chewy chocolate chip cookies

3 1/3 cups of flour
3/4 tsp. baking soda
1/2 tsp. salt
2sticks of unsalted butter softened
1 1/4 cups of packed light brown sugar
1/2 cups of granulated sugar
2 large eggs
2 large eggs yolks
1 TBSP of vanilla extract
1 ( 12once) bag of milk choclate chips
walnuts nut optional

preheat oven to 325 degrees whisk dry ingredients together in a bowl and set aside. Cream together butter and sugars using an electric mixer, beat in eggs, egg yolks and vanilla untill combines, about 30seconds, scraping down the bowl and beaters as needed. reduce mixer speed to low and slowly mix in the flor mixure untill combined. Mix in chocolate chips and nuts. Bake for 17- 20minutes or untill tops of the cookie are golden and fluffy. Let cool for 10minutes.
